Doesn't everybody? I had never made my own so I figured I'd give it a whirl. I already had tons of cheese and cherry tomatoes at home that needed to be used up. So I headed out to the grocery store after work...
On the list was: a couple jalapenos, 1lb of chicken breast, black beans, tortilla chips, avocados and a lime. I was oh-so tempted to go for the sour cream but the thought of beach season well on its way, kept me at me away from that isle.

When I came home I pulled out my cast iron grilling pan and threw some salt and pepper on the chicken and sliced it up crosswise in 1/4" strips. Once cooked through on its way to blackening {I love blackened chicken.} I sliced up the jalapenos and threw them in there to get their juices flowing! I drained and heated up those black beans.
Meanwhile, I cracked open the avocados and mashed them up with some diced cherry tomatoes, threw in some onion powder, and the juice of half a lime. Of course some salt and pepper made it a fan-freaking-tastic guacamole!

Finally I assembled the layers of chips, beans, cheese, chicken... rinse and repeat. Then add the jalapenos on top and serve the guac on the side!
It was totally delish! I apologize for the lack of actual pictures of the nachos that I made. And the amount of food I made is going to last me through at least 3 rounds of nachos and you are not going to see me complaining at. all. I guess that's all about to change when I'm going to be cooking for two and not just lonely ol' one anymore! Eek!
